Pumpkin Turkey Chili | Recipe
A huge, THANK YOU to Colleen for this recipe. She made it for Brody's birthday party and I have been craving it ever since. I also apologize for eating almost an entire crock pot of it. #sorrynotsorry I did a few things differently, so feel free to play around with the ingredients!
Ingredients:
--> One lb of Turkey Cutlets
--> Olive oil
--> 2 tsp chili powder
--> 1 1/2 tsp ground cumin
--> 1 1/2 tsp ground oregano
--> 1/2 tsp salt
--> 1 medium onion, chopped
--> 1 yellow bell pepper
--> 3 garlic cloves, minced
--> 2 cans of black beans, drained
--> 1 huge can of pumpkin (I think the recipe called for a 15oz can, but I used a huge mama can, the biggest I could find)
--> 1 can of diced tomatoes
--> One box of chicken broth
Saute the onion, pepper and garlic in a pan with the olive oil and then throw it in the crock pot. While I was sautéing, I was grilling the turkey cutlets on the grill. I threw the onions, pepper and garlic in the crock pot, chopped the turkey cutlets into little cubes and then threw everything in the crock pot for 4.5 hours on low.
